Green Eggs & Ham

Would you eat them here or there? You’ll want to eat them everywhere!

Bring Dr. Seuss’s beloved tale to life and make breakfast fun with this easy and healthy recipe. My toddler gets such a kick out of making these that he doesn’t even realize it’s my sneaky way of giving him a whole serving of spinach!! It’s just one step more than classic scrambled eggs, so why wouldn’t you? We make this one at least once a week.

Ingredients: 

Prep Time: 5 minutes

🔥 Cook Time: 5 minutes

Eggs (1 per person)

Handful of Spinach

Sliced ham

Dash of milk

Dash of Salt

Dash of garlic powder

How to Make: 

  1. Put egg, spinach, milk, salt and garlic powder in a blender and mix well (make sure you blend all the spinach chunks, the mixture will become creamy and frothy)

  2. Heat your pan on medium heat

    • Sprinkle a small amount of water onto the pan surface; if the water beads up and dances around quickly, the pan is at the right temperature

  3. Once heated, add a touch of olive or avocado oil to the pan and spread around

  4. Add mixture to the pan and stir with a rubber spatula or wooden spoon

  5. Break up ham into small pieces with your fingers and throw into the pan or, to serve on the side, cook separately for a minute or until crispy

Tips:

✅ Get your toddler involved. This is an easy recipe that is a great way to introduce them to cooking. Let them help by cracking the eggs or blending the mixture.
✅ Introducing them to the book before making this makes it even more fun. They will love to eat “Sam I Am’s Green Eggs and Ham!”
