Hidden Veggie Sauce

Hide Veggies in this Easy Sauce!

I’m obsessed with finding ways to hide veggies in as much as I can. Whenever I make a meal filled with veggies that my kids love is a huge MOM WIN moment for me. 

This sauce is a staple in my freezer! It’s a great way to use up old veggies that are going stale in your fridge. You don’t have to follow the recipe exactly. Experiment with different vegetables depending on what you have available. I like to freeze the leftovers in an ice tray. This way I have individual sized portions for lunches.

Prep Time: 15 minutes

🔥 Cook Time: 40 minutes

Ways to use it:

  • Pasta Sauce

  • Pizza Sauce

  • Drizzle over quinoa or rice for extra flavor

  • Stir fry sauce 

  • Spread on tortilla and then cook with cheese and chicken for quesadillas

  • Spread on sandwiches, burgers or wraps 

  • Thin it out with broth for a quick veggie soup 

How to Make

  1. Chop up all your veggies into small pieces. Carrots, onions, celery and garlic are always my base. Then I throw in whatever else I have in the fridge: zucchini, tomatoes, and sweet potato work well. 

  2. Sprinkle with olive oil and roast in the oven at 375 for 40 minutes, or until soft 

  3. Puree in a blender

  4. Don’t forget to taste! Picky eaters may need some salt added. 

  5. Store in a mason jar and freeze the leftovers in ice trays
