Veggie Mac & Cheese Sauce

A Healthy Spin on a Kids Classic 

At home my 2 year old eats really well. I never thought he was a picky eater until he started bringing home full lunchboxes from school. I realized that with all the fun and distractions at school, I may need to get a bit more creative with my lunches and make things a bit more enticing for him. Queue the Mac & Cheese Sauce! This is another variation of the veggie sauce, but the milk and cheese makes it creamier and much more like a REAL Mac & Cheese…. He’ll never know it’s also filled with veggies! This is a great alternative when you need something a little less “healthy” tasting.

Veggie Mac & Cheese, half stored in the fridge and the other half frozen on an ice cube tray for individual mac & cheese lunches.

Prep Time: 5 minutes

🔥 Cook Time: 20 minutes


Ingredients:

1 sweet potato, chopped into small pieces

½ cup of cauliflower florets

½ cup of milk of choice

½ grated cheese

2 tbsp of butter

½ tsp of garlic powder

½ tsp of salt

How to Make:

  1. Boil sweet potato and cauliflower in a saucepan until soft (about 20 minutes)

  2. Once soft, drain the water

  3. Transfer veggies to a blender or use a handheld blender in the same saucepan

  4. Add the milk, butter, cheese, salt, and garlic powder and blend until smooth

  5. Store in a mason jar and freeze leftovers in ice trays for individual portions 

  6. When you are ready to use, just cook the macaroni (or pasta of choice). Portion out what you will use and mix in the sauce. 

  7. Store pasta and sauce separately to avoid mushiness 


Note on Shredded Cheese:

Many shredded cheeses contain cellulose or other “anti-caking” agents as an additive to prevent it from clumping. While generally considered safe, it’s not ideal. Excessive consumption can lead to digestive issues, since humans can’t digest cellulose. Plus, some low-quality cheeses contain a high percentage of cellulose as filler. When buying shredded cheese, look for ones made with potato starch instead. Or, the best option is to buy a cheese block and grate the cheese yourself. It’s an easy swap to make that requires minimal effort.
